Healthy Summer Snacks Your Kids Will Love

When the time comes to have a meal or even a light snack, you want to make sure your kids are still getting the best possible food to help fuel them all summer long. We’ve put together a list of some of our favorite healthy summer snacks your kids will love. Enjoy!

Frozen Fruit Kabobs

Ingredients:
Grapes
Strawberries
Bananas
Any other favorite fruits
Melted Chocolate
Skewers
Instructions:
Slice up your favorite fruit and slide them onto a wooden skewer. Drizzle the fruit with the melted chocolate and place the kabobs and a baking sheet. Leave the sheet of kabobs in the freezer for 1-2 hours or until frozen. (via 100daysofrealfood.com)

Triple Berry Banana Boats

Ingredients:
Bananas
Strawberries (sliced)
Blackberries
Mini marshmallows
Instructions:
First, preheat your oven to 350 degrees Fahrenheit. Cut open your banana lengthwise and begin adding the marshmallows and fruit. Wrap the bananas with tin foil, leaving the top open. Bake the banans for 10-15 minutes or until the marshmallows have melted. You can also try this recipe at your next camp fire! (via produceforkids.com)

Little Dippers

Ingredients: 
Apples
Peanut butter
Crushed peanuts OR sliced almonds
Instructions: 
Cut up some apples into small wedges. Stick a toothpick in each wedge and dip it into some peanut butter, followed by either some crushed peanuts or sliced almonds. Serve and enjoy! (via gymco.com)

Zu-Canoes

Ingredients:
Zucchini
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 tablespoon extra-virgin olive oil
1 tablespoon white-wine vinegar
1 tablespoon minced shallot
1 cup quartered grape tomatoes
1/2 cup diced mozzarella cheese
1/4 cup thinly sliced basil
Instructions: 
Trip both ends off the zucchini and cut in half lengthwise. Cut a thin slice off the back so it sits flat. Scoop out the pulp and leave 1/4 inch shell. Chop up the pulp and set aside.
Put the zucchini halves in a microwave-safe dish and sprinkle with 1/4 teaspoon of salt and pepper. Cover and microwave on high until the zucchini is tender-crisp (about 3-4 minutes).
Whisk together the oil, vinegar, shallot and the rest of the salt and pepper in a medium bowl. Add tomatoes, cheese, basil and the zucchini pulp. Pour the mixture on the zu-canoes and enjoy!
